Drying the Golden Bean, Grenada, 1890 - 1893

Scope and Contents 281 x 216 mm. A view showing the cocoa drying racks on a Grenada estate. A group of women pose in front of the racks while workers can be seen spreading the beans uniformly. After the pods are picked the beans are 'sweated' in boxes for several days to remove the surrounding pulp. They are then placed on these racks for sun-drying before being packed and transported.
